These premium beans are from some of the best farms in Colombia and are from various growing regions including Antioquia, Tolima, Caldas, Valle del Cauca, Huila, Popayan, and Santander. This coffee has been decaffeinated using the MC Process. Only the best beans are selected to go through the costly decaffeination process. These beans have been hand screened to remove defects prior to being sent for further processing. The Methylene Chloride (MC) process is thought by some in the coffee industry to maintain coffee flavor better than other processes. During the decaffeination process, the coffee beans are soaked in hot water to extract much of the caffeine from the beans. The beans are then removed from the water and the methylene chloride solvent is added to bond with the caffeine. Then the methylene chloride/caffeine compound is removed from the water, and the beans are returned to reabsorb the caffeine free liquid. Once the coffee has been decaffeinated it is dried back to the original water content. Our MC decaffeinated Colombian coffee is bold and flavorful.
